Islands Chicken Salad Recipe
This fruity chicken salad has a tropical twist, with pineapple and oranges added. Chow mien noodles add a crunch.
Ingredients:
Broiler-fryer chicken, (cooked, deboned, and chopped, 1), Chopped celery (1 cup), Mandarin orange sections,( drained 1 cup), Pineapple chunks, (drained 1 cup), Seedless green grapes (1 cup), Mayonnaise (1 cup), Chopped onion (1/3 cup), Chow mein noodles (1 cup), Lettuce (1 cup)
Method Of Preparation:-
Take pineapple chunks, grapes, orange, mayonnaise, chicken, celery and onions and mix well. Now cover them and chill it in refrigerator. Add lettuce and the noodles just before serving.

Sweet Barbeque Chicken Recipe
It is very tasty dish in which chicken is cooked with various ingredients like Worcestershire, ketchup, honey, mustard etc.
Ingredients:
Chicken breasts (6 skinless, boneless), Juice of 2 oranges, Apple butter (1/2 cup), Onions,{ cut into 1/2″ slices, (2 large white)}, Garlic (minced, 3 cloves), Olive oil (1/4 cup), Honey (2 Tbsp), Brown sugar (1/2 cup), Worcestershire sauce (2 Tbsp), Dry mustard (1/2 tsp), Cheese (6 slices), Hot sauce, or to taste (1/2 tsp), Pepper (1/2 tsp), Garlic powder (1/2 tsp), Ketchup (1/2 cup)
Method of preparation
Take a large shallow dish and place chicken in it. Add garlic, juice and oil in that dish and keep it in refrigerator for almost 15-20 minutes. In the meantime take a small saucepan and add apple butter, honey, Worcestershire, ketchup, brown sugar, garlic powder, pepper, mustard and hot sauce. Cook for 10-12 minutes until the sauce thickens. Now take chicken from refrigerator and cook it on grill or on broiler for about 6-8 minutes per side until it is just cooked, now brush sauce on it and cook for 2 minutes more. Now brush onions with the sauce and cook it until the onions caramelize. Now put the slice of cheese on the chicken and cook it again until cheese melts. Now remove the chicken and serve it with onions on top.

Corn tortillas are filled with a mixture of shredded chicken, enchilada sauce, Mexican-blend cheese, green chilies, and onion, rolled-up and baked until crisp.
Ingredients:
Chicken (2 cups, cooked and shredded), Corn tortillas (24), Green chilies {1 can (4 oz.) diced}, Mexican 4-Cheese blend (1 cup Shredded), Mild enchilada sauce {1 can (10 oz.)}, Minced onion (1/2 cup), Garlic salt (1/2 tsp.), Vegetable Oil (3/4 cup), Non-stick cooking spray
Method Of Preparation:-
Take a large bowl and combine chicken, sauce, cheese blend, onion chilies and garlic salt. Mix them well and keep it at the side. Now in a skillet, heat vegetable oil and dip tortillas in oil with the help of tongs, for about 5 seconds from both sides. Drain them on the paper towel. Keep them warm. Now add chicken mixture in the tortillas and roll them. Now place the tortillas on a cookie sheet sprayed with the non stick cooking spray. Bake them at 400F for approx. 15 minutes or until the desired crispiness.

Cooked chicken (1 1/2 cups shredded), Dry roasted almonds, (chopped 1/2 cup), Golden raisins (3 tbsp), Apricot preserves (1/4 cup), Chopped cucumber( 1/2 cup), Light mayonnaise (1/2 cup), Nonfat plain yogurt (2 tbsp), Lime juice (1/4 cup), Curry powder (1 tbsp), Thinly sliced celery (1/4 cup), Fresh Italian flat leaf parsley or cilantro (1/4 cup chopped), Whole wheat tortillas (4), Salt (1/2 tsp), Black pepper (1/8 tsp)
Method Of Preparation:-
Take mayonnaise, non fat plain yogurt, lime juice, apricot preserves, curry powder, salt and pepper in a bowl and whisk it until it becomes smooth. Now pour the cucumber, celery, golden raisins, parsely or cilantro, chopped almonds and cooked chicken in the bowl. Refrigerate it for 30-40 minutes, covered. Now divide the mixture evenly in 4 parts and spread it on your tortillas. Roll them. If you want to carry your sandwiches to picnic then wrap them in aluminum file. Otherwise serve it.

Take chicken and wash it thoroughly. Now cut the chicken into ½ inch cubes. Now heat olive oil in a pan and sauté chicken, onions and salt and pepper according to your taste. Cook chicken with continuously stirring for about 10 minutes or until the chicken is done. Now add chili powder, cumin, chilies, chicken broth, and cayenne pepper and mix well. Now boil it over the medium heat and the reduce the heat to simmer. Cook until all the liquid evaporates. Remove from heat and let it cool. Now heat the large frying pan over a medium heat and place tortilla flat on a cutting board. Now spread a thin layer of cheese on the tortilla and then a layer of chicken mixture and again a layer of cheese. Take care that each layer should be about ¼ inch thick not more than that. Now place another tortilla on the top. Now carefully place it from the board to the fry pan, check it frequently and when your quesadilla is light brown from bottom, turn it. Serve with your choice of salsa, sour cream and guacamole.

Method Of Preparation:-
Take a chicken and wash it thoroughly and cut the chicken into 2 pieces. Now put that cut pieces in a plastic bag and pound to very thin with the meat mallet. Now take three shallow dishes and mark them 1, 2 and 3. In 1st dish, put flour, salt and pepper and mix it well. In 2nd dish, beat egg and combine water with some salt and pepper. In 3rd dish, mix panko bread crumbs and the rest of the ingredients. Mix them well. Now coat the chicken with ingredients from dish one, second and third. Now put the olive oil in the skillet and heat it. Now place chicken in the olive oil. Now fry the both sides of chicken until it is golden brown from both the sides. Drain on paper towels. Take cheddar cheese, jalapeño pepper and cream cheese, mix them well in a food processor, until they become smooth. Now take boneless and skinless chicken breast and pound them thin. Now take the cheese mixture and spread ¼ of the mixture at the center of the chicken breasts. Now roll up the chicken with the end folding inside and secure up with the tooth pick. Dipping Sauce:
Chicken broth (½ cup), Rice wine vinegar (1 tbsp.), Tomato sauce (1 tbsp.), Soy sauce (2 tbsp.), Finely minced garlic (½ tsp.), Brown sugar (1tbsp.)
Mu Shu:
Chicken breasts (½ -3/4 lb.), Eggs (2, lightly beaten), Tortilla-style bread wraps [4 (9-inch )], Oriental bean sprouts (2 cups), Toasted sesame oil (1 tbsp.), Green onions (4, trimmed and diced), Minced garlic (1 tsp.), Sliced mushrooms (1 cup), Canned bamboo shoots (½ cup, drained ), Ground ginger (½ tsp.), Soy sauce (1 tbsp.)
Method Of preparation:-
Dipping sauce:
To make dipping sauce, take a small bowl and whisk together all the sauce ingredients. Set aside.
Mu shu:
For the preparation of mu shu take a large skillet and heat sesame oil over medium high heat. Now sauté chicken breast chunks, mushrooms and garlic for about 5 minutes. Now add bamboo shoots and green onions and sauté for 3 more minutes. Add ginger, bean sprouts and soy sauce. Cook it for 2 minutes(uncovered). Now add eggs and mix well. Cook until it just sets. Now warm wraps in microwave about 30 seconds, until it becomes soft and pliable. Now divide the mixture into 2 equal half’s and cut the warm wraps diagonally and serve immediately with dipping sauce.
