Spicy Garlic Cashew Chicken Recipe
Ingredients
Chicken thighs (3pounds), roasted, salted cashew nuts (1c), Kosher salt and freshly ground black pepper, chopped cilantro (6tbsp), jalapeno peppers, sliced (1 to 2), grape seed or olive oil (1/4c), roughly chopped garlic (4cloves), juice of 1 lime + lime wedges (for garnish), brown sugar (2tsp).
Method of preparation:-
Take a food processor or a blender; add jalapeno, garlic, cashews, oil cilantro, soy sauce, lime juice, brown sugar and 2 tablespoon of water in it. Blend this mixture until it gets smooth. Add salt and pepper in it according to taste. Keep the third part of marinade aside. Use the remaining marinade to coat the chicken. Sprinkle salt and pepper over the chicken pieces. Then put the pieces in marinade to coat. Keep the marinated chicken in refrigerator for 2 hours to chill. Take out the chicken from refrigerator and keep it at room temperature for some times before cooking. Heat the grill or broiler. Place the chicken on grill or broiler and cook it for about 20 to 30 minutes until it gets crispy and golden. When it gets ready then serve it with reserved marinade, cilantro and lime wedges.
