Chicken is marinated in yogurt, lemon juice, and plenty of spices, then grilled.
Ingredients:-
Chicken (3-pound), Minced garlic 1 tablespoon, Ginger root 1 tablespoon peeled and grated or crushed, Ground cardamom 1/4 teaspoon, Ground cloves 1/4 teaspoon, Ground cumin 1 tablespoon, Ground coriander 1 teaspoon, Cayenne pepper 1/2 teaspoon, Fresh lemon juice or malt vinegar 2 tablespoons, Vegetable oil, for brushing, Fresh cilantro sprigs for garnish, Fresh-ground black pepper 1/4 teaspoon, Salt, Slices of cucumber, red onion, tomato and lemon, for garnish
Method Of Preparation:-
Take the chicken and prick it with the fork and cut the chicken into slashes so that marinade can penetrate inside. In the bowl combine, vinegar, lemon juice, yogurt, garlic, ginger, coriander, cumin, cayenne pepper, black pepper, cloves, cardamom and salt and mix it properly. Now in this mixture rub the chicken and marinate it for overnight in the refrigerator. Remove the chicken from refrigerator at least 30 minutes before cooking. Press it gently to remove the excess of marinade and then apply the layer of oil on the chicken. Cook it for 45 minutes or until the juice run clear and chicken is cooked properly. Serve it by garnishing with the ingredients of garnishing.
