Curried Chicken and Corn Recipe
Ingredients
Boneless, skinless chicken trimmed of fat and cut in 1 inch chunks (1 ¼ lbs), Vegetable oil (1 tbsp), plain nonfat yogurt mixed (1 tbsp all purpose flour about ¾ cup), chopped onions (1 ¼ cup), thawed frozen corn kernels (1 package about 10 oz.), curry powder (2 tsp to taste) and chopped fresh parsley (for garnish).
Method of preparation:-
Take a large heavy frying pan, place it over medium heat and heat oil in it. Add onions in it and mix curry powder in it. Cook this mixture for about 3 minutes by stirring 2 to 3 times until the onions get soft. Now add chicken in it and cook it for about 5 to 7 minutes until the chicken gets solid. Then add corns in it and cook them. When the corns get hot then mix the yogurt mixture in it and keep it to simmer for about 2 minutes over low heat until the sauce gets smooth. When it gets ready then sprinkle parsley over it and serve it.
