Tamarind Glazed Chicken Thighs Recipe

Ingredients
Chicken thighs (4pounds), frozen tamarind fruit pulp, such as Goya, thawed ( 1package about 14 ounces), adobo seasoning such as McCormick’s (2tbsp), whole cloves (3), packed brown sugar (1/2c), apple cider vinegar (2 1/2c), grated peel of (1 orange), Worcestershire sauce (1/2tsp), chopped cilantro ( for sprinkling) and salt (to taste).

Method of preparation:-
tamarind-e28093glazed-chicken-thighsFirst heat the oven to 375 degrees F and place a rack in the center of oven. Take a large bowl, add chicken in it and mix it with adobo seasoning. Take 2 cups of vinegar, pour it into the bowl and then keep the bowl in the refrigerator for about 1 hour or 4 hours. Take a small saucepan, place it over medium heat. Add ½ cup of vinegar and brown sugar in it and cook it for about 5 minutes by stirring regularly until it gets thickened. Then mix Worcestershire sauce, tamarind and cloves in it and cook it for about 15 minutes until it gets thickened. Mix orange peel and salt in it. Drain the chicken in the bowl and mix 2/3 of the tamarind glaze in it to coat the chicken properly. Place the chicken to a rack set in the oven. Bake it for about 30 minutes, spread more glaze on it and again bake it for about 15 minutes more. When it gets ready then take it out from oven. Sprinkle cilantro over it and then serve it.
