Spicy Roasted Chicken Thighs Recipe
Ingredients
1. Chicken thighs with skin, pierced all over with a small knife (8)
2. cumin powder (1tsp)
3. salt (1/2tsp or to taste)
4. tomato paste (2tbsp)
5. juice and zest of (I whole lemon)
6. jalapeño pepper, seeded (1small) or cayenne ( to taste)
7. fresh ginger root, peeled (1 to 2 inch piece)
8. coriander seeds or ground coriander (1tsp)
9. peeled garlic (4cloves)
Method of preparation:-
1. First heat the oven to 400 degrees F. Take a bowl, put chicken thighs in it. Take ginger, garlic and peppers, mince them and then put them in a small food processor with all remaining ingredients and then grind them to make paste. Then rub this mixture into the chicken.
2. Cover the chicken and keep it in the refrigerator for 1 day. Take a roasting pan, put thighs in it with skin side up.
3. Place the pan in oven and roast the chicken for about 25 to 35 minutes until it gets cooked. When the chicken gets roasted then takes it out from oven and serve it.
