Peach Glazed Chicken Thighs Recipe

Ingredients
1. Chicken thighs (6)
2. ripe peaches (2large)
3. sliced scallions (2tbsp)
4. red wine vinegar (1tbsp)
5. Honey (2tsp)
6. olive oil (2tsp)
7. freshly ground pepper (1/4tsp)
8. salt (1/2tsp)

Method of preparation:-
1. Take a peach, peel and chop it and put it in a bowl of medium size. Mash the peach with fork. Place the chicken thighs in bowl and mix them properly to coat. Cover the bowl and keep it for about 2 hours at room temperature.

2. Heat the oven to 350 degrees F. Take out the chicken from the marinade, pat dry it with paper towels and then sprinkle salt and pepper over the chicken.

3. Take a large ovenproof frying pan, place it over high heat. Heat olive oil in it and add chicken thighs in it with skin side down. Cook them for about 5 minutes until the skin changes to deep brown and gets crispy. Turn the side of thighs and place the pan in oven and then bake it for about 15 minutes until the chicken gets soft.

4. Now take other peach, peel it and cut it into slices. Take out the chicken from the pan, take out the fat from the pan and place the chicken thighs back to the pan. Cook them over high heat until the chicken starts to sizzle.

5. Add honey and coat the thighs in honey. Cook it by stirring for about 1 minute until the honey starts to brown. Add peach slices and vinegar in it and mix it for about 1 ½ minute to glaze the chicken.

6. Place the chicken thighs on a serving plate, place the peach slices in the center and decorate it with scallions. When it gets ready then serve it with pasta, rice or vegetable salad.
