Lemon Chicken Scalloppini Recipe
Ingredients
1. Skinless chicken thighs (6 boneless)
2. chopped fresh tarragon leaves (1/2tsp)
3. heavy cream (1/3c)
4. lemon juice (1tbsp)
5. chicken broth (1/3c)
6. dry white wine (1/3c)
7. olive oil (2tbsp)
8. butter (1tbsp)
9. grated lemon rind (2tsp)
10. pepper (1/8tsp)
11. salt (1/2tsp)
12. flour (2tbsp)
Method of preparation:-
1. Take two pieces of waxed paper, place the chicken thighs between them. Then pound the chicken thighs with rolling pins or meat maller until the thighs get ΒΌ inches thick.
2. Take a shallow bowl, mix flour, lemon rind, pepper and salt in it and then coat the chicken in this mixture.
3. Take a large heavy frying pan, place it over medium heat. Heat oil in it and cook thighs in it for about 2 to 3 minutes until get brown. Then take it out from the pan. Increase the heat to high and add chicken broth and wine in it.
4. Place the chicken again in pan and keep it to simmer for about 5 to 10 minutes until the chicken gets cooked. Now add tarragon, cream, lemon juice in it and cook it for 2 to 3 minutes by stirring until it gets hot. Now it gets cooked and serves it over couscous.
