Chicken With Mango, Honey and Shallots Recipe

Ingredients
Shallots (250gms), boned and skinned chicken thighs (900gms).
For marinade:- Spicy mango chutney (250 gms), salt (a pinch), tomato sauce, ketchup (1tbsp)curry powder e.g. Madras style (1/2tsp), water (1tbsp), honey (1tbsp), white wine vinegar (1tbsp), balsamic vinegar (1tbsp), vegetable oil (1tbsp).

Method of preparation:-
chicken-with-mango-honey-and-shallotsTake a large bowl; mix the ingredients of marinade in it. Add chicken in the marinade mixture and coat it properly. Cover the bowl and keep it in the refrigerator for about 3 hours to marinate. Take a casserole dish, place the chicken in it and then add shallots and marinade in it. Cover the dish, place it in oven and bake it for about 50 to 55 minutes at fan oven at 170 to 180 degrees C. After 25 minutes uncover the bowl and turn the sides of chicken pieces and again bake it. When it gets ready then takes it out and serves it with cucumber and rice.
