Chicken Thighs With Black Beans Relish Recipe
Ingredients
Boneless, skinless chicken thighs (6 about 1 ½ pounds), Monterey jack cheese (4 ounces), ground cumin (1/2tsp), sugar (1tsp), cider vinegar (2tbsp), minced garlic (1clove), chopped red bell pepper (1/2c), peeled and diced tomatoes (1med. Size), thinly sliced scallions, green tops included (2/3c), black beans, drained and rinsed (1can about 16 ounces), salt and pepper (to taste), minced garlic (1clove0, olive oil (2tbsp).
Method of preparation:-
Take sheets of plastic wrap, place the chicken between the sheets and then pound the chicken to ¼ inch thickness with meat mallet. Take a large frying pan, place it over heat. Heat oil in it and fry chicken in it for about 12 minutes until it gets brown. Add 1 clove of garlic in it and cook it for about 2 to 3 minutes until the chicken gets soft and opaque. Sprinkle salt and pepper over it. Take a casserole; place the chicken in single layer in the casserole. Place the casserole aside and keep it warm. Heat the oven to 400 degrees F. Now to make relish, take a bowl, add scallions, bell pepper, beans, tomato, cumin, sugar, vinegar, garlic 1clove, salt and pepper in it. Mix all these ingredients and then place the mixture over the chicken in the casserole with spoon. Now place the casserole in oven and bake it for about 10 to 15 minutes until it gets heated. When it gets ready then serve it with yellow rice.
