Polynesian Chicken Noodle Soup Recipe
This is a fun twist on traditional chicken noodle soup. Using rotisserie chicken makes this a quick and easy dinner for family.
Ingredients:
1. Rotisserie chicken {skinned, boned, and chopped (1 whole)}
2. Chicken broth (7 Cups)
3. Bottled sweet and sour sauce (1/2 Cup)
4. Chopped cilantro (1/2 Cup)
5. Chopped salted peanuts (1/2 Cup)
6. Large carrots (grated 2)
7. Rice noodles or stalks (broken in half, 1/2 of a 6-ounce package)
8. Straw mushrooms( drained 1 can whole)
Method Of Preparation:-
1. Take carrots, chicken broth and sauce in a medium pot. Stir it well and boil it.
2. Add rice noodles in it and cook it on simmer until they are softened (10 min approx.). Add chicken and mushrooms and stir it well. Serve it with sprinkled cilantro and peanuts.
