Tuscan Chicken Sandwiches Recipe

Ingredients
Skinless, boneless chicken thighs (1 1/2lbs), chicken broth (2tbsp), salt (1/2tsp), minced garlic (2cloves), chopped red bell pepper (1), chopped onion (1), focaccia bread, split in half (1round about 10 inches), baby frozen peas, thawed and drained (1/2c), seeded and chopped tomato (1), pesto (1/4c), mayonnaise (1/3c).

Method of preparation:-

tuscan-chicken-sandwichesTake a slow cooker of 4 to 5 quarter, place garlic, bell pepper, onion and chicken in it. Sprinkle salt and then pour chicken broth over it. Cover the cooker and cook it for about 6 to 7 hours on low heat. Take a small bowl, mix peas, chopped tomato, pesto, mayonnaise in it. Blend all ingredients properly and then keep the bowl in refrigerator. When the chicken gets cooked then takes it out from the cooker and shred it with forks. Place the chicken back to the slow cooker and mix it well. Now make the sandwiches with focaccia bread, tomato pesto and chicken filling. Then make the slices of large sandwich into 6 to 8 wedges. Then grill these sandwiches on Panini grill until the bread gets toasted. Now serve it at once.
