Grilled Chicken Salad with Fruit Recipe
This recipe can be served to as many people as you want. Grilled chicken pieces are combined with eggs and your favorite fruits with your favorite dressings. You can alter the fruits and dressings and can make two different types of salads.
Ingredients:
1. Skinless boneless chicken breasts halves (1 pound)
2. red wine vinegar (1/3 c)
3. vegetable oil (1 c)
4. pecans (1/2 c)
5. sliced fresh strawberries (1 c)
6. onion, minced (1/2)
7. 2 heads Bibb lettuce – rinsed, dried and torn
8. 1/2 cup white sugar
9. ground white pepper (1/4 teaspoon)
10. 1 teaspoon ground mustard
11. 1 teaspoon salt
Method Of Preparation:
1. Take chicken and grill it properly on high heat on a lightly greased grill grate. On each side, Grill it for 8 minutes and so that juices run clear. Noe remove it from heat and after cooling slice it.
2. Over medium high heat place pecans in a dry skillet. About 8 minutes stir it frequently until fragrant. Keep it aside.
3. Grind the the vegetable oil, red wine vinegar, pepper, onion, mustard, salt, and sugar in a blender.
4. On a serving plate arrange lettuce. Add pecans, grilled chicken slices and strawberries on top. Pour ground mixture over it.
