Chicken Pasta Salad Nicosia Recipe
Ingredients
Diced and cooked chicken (3c), salt (1/2tsp), crushed hot red pepper (1/4tsp), minced garlic (1clove), Dijon mustard (2tsp), balsamic or red wine vinegar (3tbsp), extra virgin olive oil (1/2c), green beans, cut diagonally in half (1/2 pound), ziti or other short tubular pasta (3/4pound), anchovies rolled in capers (1can about 2 ounce), cherry tomatoes, halved (12), chopped fresh basil (3tbsp or 1tp dried), chopped parsley (1/4c), sliced black olives (1/2c).
Method of preparation:-
Take a large pot, boil salted water in it and then cook pasta in it for about 8 to 10 minutes. Then add green beans in it and boil it for about 4 to 5 minutes until the pasta gets soft and the beans get crispy. Then drain the pasta and beans in colander and then wash under cold water and drain well. Take a large bowl, mix olive oil, mustard, salt, hot pepper, garlic, vinegar in it. Then add pasta and green beans, basil, parsley, olives, red onion and chicken in it. Mix all these ingredients properly. Take a shallow serving bowl, place the salad in it and decorate it with anchovies and tomatoes and serve it.
