Healthy Chicken With Spinach and Pasta Recipe

Ingredients
Boneless chicken breasts halves, grilled, cut into 1 inch cubes (1 pound), dry pasta shells (6 ounces), chicken broth (1c), olive oil (1 to 2 tbsp), minced garlic (4med. Cloves), fresh spinach (20 ounces), grated parmesan cheese (1/2c), salt and pepper (to taste), ground nutmeg (1/2tsp).

Method of preparation:-
healthy-chicken-with-spinach-and-pastaTake a large sauce pan, add broth in it and cook spinach in it until it gets soft. Drain the spinach and reserve the broth. Squeeze out the excess liquid from the spinach. Now cook pasta in a pot according to the instructions on package and then drain it. Take a heavy frying pan, place it over medium heat. Heat oil in it and sauté garlic until it gets soft by stirring it regularly. Add spinach, pepper, nutmeg and salt in it. Then add the grilled pieces of chicken to the spinach mix it and then add reserved broth in small quantity. Mix it properly and add more broth if needed. Now add the cooked pasta shells in to the mixture and mix well. Serve it at once with parmesan cheese.
