Chicken Penne Al Fresco Recipe
Ingredients
Diced cooked chicken (2c), chopped fresh basil leaves (1 1/4c), coarsely ground black pepper (1/2tsp), salt (1/2tsp), chicken broth (3 3/4c), penne pasta (3c), cherry tomatoes (2c), sliced garlic (4cloves), freshly grated parmesan cheese (1/4c), olive oil (1tsp).
Method of preparation:-
Take microwave-safe casserole dish, coat it with olive oil and then mix tomatoes and garlic in it. Cover the dish and place it in microwave. Cook tomatoes and garlic in it on high for about 4 to 5 minutes by stirring after 2 minutes until the tomatoes get burst. Take out the tomato and garlic mixture from the microwave and then crush the remaining tomatoes by using fork. Mix chicken broth, pasta, salt and pepper in it. Now cover the dish and place it again in microwave and cook on high for about 16 to 18 minutes until the pasta gets soft. Stir the mixture after 10 minutes while cooking. Now add cooked chicken, basil and parmesan cheese in it. And mix it well. Now it is ready to serve.
