Chicken Pasta Shannon Style Recipe

Ingredients
Skinless. Boneless chicken breasts halves, cut into bite size pieces (1pound), farfalle pasta, or bow tie (1pound), Italian seasoned bread crumbs (1c), water (2tbsp), egg (1), olive oil, divided (4tbsp), grated parmesan cheese (1/2c), grape tomatoes (1/2pint), Greek Salad dressing (1c), chopped fresh mushrooms (1/2c), chopped yellow bell pepper (1/2), chopped green bell pepper (1/2), chopped red bell pepper (1/2), chopped onion (1), minced garlic (1clove).

Method of preparation:-
chicken-pasta-shannon-styleTake a large pot of salted boiling water, cook pasta in it for about 8 to 10 minutes until it gets soft and then drain it. Take a frying pan, place it over medium heat. Heat 3 tablespoon of oil in it. Take a bowl, mix egg and water in it. Take another bowl, add bread crumbs in it. Take chicken pieces, first dip them in egg mixture and then coat them with bread crumbs. Put the coated chicken pieces in frying pan and cook them for about 5 minutes from all sides until they get golden brown. Drain them on paper towel. Take another frying pan, place it over medium heat. Heat the left over oil in it and add mushrooms, yellow bell pepper, red bell pepper, green bell pepper, onion and garlic in it. Cook this mixture by stirring until the vegetables get soft. Take a large bowl, mix pasta, vegetables and chicken in it and then add Greek dressing in it. Mix it well and add tomatoes over it. Then sprinkle the parmesan cheese on the top.
