Chicken Pasta Casserole Recipe
Ingredients
Boneless, skinless chicken breasts (1lb), penne pasta (8oz), fresh baby spinach, washed and patted dry with paper towel 92c), cream cheese (1pkg. about 3 oz), diced tomatoes, drained (1can about 14 oz), spaghetti sauce (1jar about 28 oz), Italian seasoning (1tsp), olive oil (1tbsp), grated parmesan cheese (1/4c), shredded mozzarella cheese (2c).
Method of preparation:-
First heat the oven to 350 degree F. Take a baking dish of 9*13 inches and grease it with nonstick spray. Now cook pasta in a pan according to the instructions on package. Then drain it and pour it into the baking dish. Take a large saucepan, place it over medium high heat. Heat oil in it. Take chicken breasts and cut it into small pieces. Put the chicken pieces in oil and fry them until they get brown. Add drained tomatoes, half of spaghetti sauce and Italian seasoning in it. Reduce the heat to low and keep it to simmer for about 2 to 3 minutes. Take cream cheese and cut it into small chunks and then add into the chicken and tomato sauce mixture. Keep it to simmer until the cream cheese gets melted. Mix spinach in it and cook it until it gets soft. Then pour the chicken mixture over cooked pasta in baking dish. Spread 1 cup of mozzarella cheese on top and then spread left of spaghetti sauce and parmesan cheese over it. Place the dish in oven and bake it at 350 degrees F for about 20 minutes. When it gets ready then take it out from oven and serve it.
