This is one of my favorite chicken in which cream, onions and lots of spices are used.

Ingredients:-

1.Boned chicken thighs, 3 pounds
2.Chicken stock 1 cup
3.Heavy cream 1/2 cup
4.Onions, finely chopped 2
5.Greek yogurt 1 cup
6.Ground almonds 4 tablespoons
7.Ginger, peeled 1 (1-inch) piece
8. Garlic, peeled 4 cloves
9. Ground cumin 2 teaspoons
10. Ground coriander 1 teaspoon
11. Dried chili flakes 1/2 teaspoon
12. Cinnamon stick, broken in half 1
13. Cloves 4
14. Water 1/2 cup
15. Cardamom pods, bruised 5
16. Sugar 1 tablespoon
17. Bay leaves 2
18. Salt 1 teaspoon
19. Vegetable oil 1/4 cup
20. Garam masala 1 teaspoon
21. Sultanas (golden raisins) 1/2 cup
22. Flaked almonds, toasted, to garnish 3/4 cup

Method Of Preparation:-

Take the garlic, ginger, coriander, cumin and chili and make the paste of it. Add almonds and water and again blend them well. Now heat the oil in the pan and add fry chicken in it. Add spices and onions in oil and cook on the medium heat until light brown. Pour the paste and cook it again for few minutes. Add yogurt with stirring followed by cream and sultanas. Put the browned chicken and sprinkle salt, sugar and garam masala. Cover and cook it for 15-20 minutes on the medium heat. Before serving just sprinkle the toasted flaked almonds.

This recipe is typical Indian dish and is very tasty, but be careful that you prepare it one day before.

1 .Garam masala powder (2 tsp)
2. Red chili powder (1 tsp)
3. Cloves (8)
4. Cumin seeds (1 tsp)
5. Brown cardamom (1)
6. Roasted coriander powder (1 tbsp )
7. Black peppercorns ( 6)
8. Turmeric powder (1 tbsp))

Method Of Preparation:-

Take a bowl and add ¾th garlic and ½nd ginger and ½nd garam masala, salt( 1tsp), 1/3rd turmeric ½ of curd and lemon juice and mix it. Now make the small cuts in the chicken flesh and rub all the paste over the chicken. Set aside for 2 hrs. Heat the ghee in the saucepan and fry the chicken in it. In another pan fry onions in the remaining ghee with 2 bay leaves, cloves and cardamom until they become golden. Add turmeric and chili powder and paste of coriander and cumin seeds along with onions and ginger. Cook it for 10 minutes until the ghee starts to separate and add curd, tomatoes and salt. Now add the chicken and pour water in it. Cook it in the oven 200 degree centigrade for 1 hr. garnish with garam masala and coriander leaves just before serving.

Chicken is marinated in yogurt, lemon juice, and plenty of spices, then grilled.

1. Chicken {1 (3-pound)}
2. Minced garlic 1 tablespoon
3. Ginger root 1 tablespoon peeled and grated or crushed
4. Ground cardamom 1/4 teaspoon
5. Ground cloves 1/4 teaspoon
6. Ground cumin 1 tablespoon
7. Ground coriander 1 teaspoon
8. Cayenne pepper 1/2 teaspoon
9. Fresh lemon juice or malt vinegar 2 tablespoons
10. Vegetable oil, for brushing
11. Fresh cilantro sprigs for garnish
12. Fresh-ground black pepper 1/4 teaspoon
13. Salt
14. Slices of cucumber, red onion, tomato and lemon, for garnish

Method Of Preparation:-

Take the chicken and prick it with the fork and cut the chicken into slashes so that marinade can penetrate inside. In the bowl combine, vinegar, lemon juice, yogurt, garlic, ginger, coriander, cumin, cayenne pepper, black pepper, cloves, cardamom and salt and mix it properly. Now in this mixture rub the chicken and marinate it for overnight in the refrigerator. Remove the chicken from refrigerator at least 30 minutes before cooking. Press it gently to remove the excess of marinade and then apply the layer of oil on the chicken. Cook it for 45 minutes or until the juice run clear and chicken is cooked properly. Serve it by garnishing with the ingredients of garnishing.

1. Chicken ( 2 ½ pound)
2. Yogurt ( 2cups)
3. 3 cloves garlic
4. medium onions, chopped 2
5. 1 tsp paprika
6. 2 tsp fresh ginger, chopped
7. 2 tsp peanut or sunflower oil
8. 2 tsp ground coriander
9. 1/2 tsp ground chili
10. 1 tsp cumin
11. Seeds of 2 peeled cardamom pod
12. 1 tsp poppy seed
13. 1 tsp turmeric
14. 1 bay leaf
15. 2 tbsp fresh coriander, chopped

Method Of Preparation:-

Take the chicken and marinate in garlic (1), onion (½), yogurt, paprika, salt and pepper for few hours. Now heat the oil and sauté onions and garlic for just one minute. Remove it and set aside. Now add chili, coriander, cumin, turmeric, cardamom seeds and poppy seeds and fry them for a few minutes. Add the chicken and pour enough of water in it and the left over marinade. Now add onions and garlic with bay leaf. Now simmer the gas and cook the chicken for 45 minutes or until the chicken is tender. Remove it from the gas and serve it by spraying the coriander leaves on it.

Ingredients:

1. Chicken ( 3-4 lb, skin removed)
2. Onions (2 medium)
3. Ginger ( 1 tsp, chopped)
4. Butter ( 6 tbsp)
5. Cayenne peppers ( 2-3)
6. Milk ( 1 cup)
7. Yogurt ( 1 cup)
8. Almonds ( ¼ cup)
9. Walnuts ( ¼ cup)
10. Salt
11. Garam masala
12. Turmeric ( 1 tsp)

Method Of Preparation:-

Take the cilantro and mince it properly. Mix it with almonds, melon seeds, cashew or walnuts for garnishing (optional). Make the smooth paste of onions and ginger in food processor or mixer. While you are making the paste, heat the butter in the deep skillet and when butter is heated, add onion-ginger paste and cook it until it turns light brown with continuous stirring. Now add chicken and yogurt. Mix it well and cook on the medium heat until it dries and chicken begins to brown in color. Grind the almonds, walnuts, seeds and cashew into a fine powder and mix them with the milk. Add this mixture in the chicken and add turmeric, chili, garam masala and cayenne. Cook it on the medium heat with stirring until the sauce becomes thick and chicken is tender. Serve it with butter roti, tandoori roti or naan.

In this recipe soft boneless chicken is cooked with kasoori methi and Chauli beans and sprinkled with chat masala and other spices.

2. Oil ( 2 tsp)
3. Ginger (1 tsp)

Method Of Preparation:-

Take the chicken and wash it. Pat dry it and marinate in the paste made by the things except tomatoes, beans and methi used for the marination. Keep it at side for 10 minutes. For the gravy sauté ginger and garlic in the hot oil. Now add tomato puree, all spices, methi, black pepper, salt and water, if u feel the need. Add the chicken and cook the masala and add the blanched Chauli beans and cook it for another 5-7 minutes. Remove from the heat and serve it with bread.

This is the very easy to make recipe in which chicken is fried in the oil.

Ingredients:

1. Boneless chicken pieces ( 500 g)
2. Chopped green chilies (1-2)
3. Onion ( 1, chopped)
4. Ground cumin ( 1tsp)
5. Vinegar ( 2 tsp)
6. Lemon juice ( 1 tsp)
7. Ginger garlic paste ( 1tsp)
8. Curd ( 1 tsp)
9. Oil ( 2 tsp)
10. Salt (1 ½ tsp)

Method Of Preparation:

Put all the ingredients viz. chilies, onions, cumin, vinegar, ginger garlic paste, lemon juice, curd, oil and salt in the bowl and blend them well until it turns to a smooth paste. Now marinate the chicken pieces in this mixture and refrigerate it for 40 minutes. Deep fry them until the color changes to golden brown. Now serve them with tomato sauce or mint chutney.

In this recipe, boneless chicken is cooked with tomatoes, onions, garlic, ginger, spices and herbs in the traditional wok on a very high heat.

1. Whole Chicken (1)
2. Chopped onions( medium size, 3-4)

Method Of preparation:-

Wash the chicken properly and cut the chicken into the small pieces. Take a Kadhai and heat oil in it. Now add chopped onions and green chilies and fry it until they are light brown in color.. no add chili and turmeric powder, garam masal, coriander powder and salt and mix them well. Now add ginger, tomatoes, garlic in it and cook until the tomatoes until they become tender. Now add little water and bring it to the boil. When the gravy becomes thick, add the chicken pieces in it. Reduce the heat and cover and cook it for 10 -15 minutes. Remove it from the heat and serve it in the small copper base wok by garnishing it with coriander leaves.

This chili chicken is fried with green peppers, onions, tomatoes, white pepper, salt and sugar.

Ingredients:-

1.Boneless chicken (500-600 g)
2.chicken Broth (2 cups)
3.Egg (1)
4.Soya sauce ( 2 tbsp)
5.Chopped Green Chilies (5-6)
6.Green Onion Chopped (2)
7.Garlic Paste (1 tsp)
8.White Pepper Powder (1/2 tsp)
9.Ajinomoto
10.Corn Flour/Corn Starch (2 tbsp)
11.Oil to fry
12.Salt
13.Sugar (1 tsp)

Method Of Preparation:-

Take the chicken and cut it into small cubes around 1 inch of size. Now mix corn flour and soya sauce( 1 tbsp each), egg and slat in the bowl and mix them well. Now marinate the chicken in this mixture for around 15 minutes. In the meanwhile heat the oil in the skillet for deep frying the chicken. Fry the chicken until it turns golden brown. Now in the separate wok heat the oil and sauté garlic paste and green chilies for few seconds. Now add chicken broth in it and cook for few minutes. Bring it to boil and add sugar, salt and Ajinomoto and the remaining soya sauce. Now add fried chicken in it and cook for 2-3 minutes. Serve it with garnishing it with green onions on the top with rice.

This recipe is idle for the tea time get together and for family picnic and is the best snacks.

Ingredients:-

1. Cooking spray
2. Chicken breasts (2 pounds boneless, skinless, 1/2-inch thick slices)
3. Scallions (8-12)
4. Wooden picks
5. Sodium soy sauce (1/4 ¼ cup reduced)
6. Honey (1 tbsp)
7. Dark sesame seeds oil ( 2 tsp)
8. Ginger ( 1 tsp)
9. Sesame seeds ( ¼ tsp , to garnish)

Method Of Preparation:-

Coat the stove-top grill pan or an outdoor grill with the cooking spray and preheat to medium- high heat. Now lay out the three chicken strips of about ½ inch apart. Now place the scallion over the chicken one by one, with the help of tooth picks. Repeat the process until you have used 1 pound of chicken. Now season and grill the remaining one pound of chicken breasts by repeating the same process. Now in a small bowl, mix the honey, soy sauce, ginger, sesame oil and garlic powder and whisk them. Reserve the half cup of marinade for the sauce. Brush the remaining of the marinade over the kebabs. And grill them for 5-7 minutes turning them occasionally until the chicken is cooked properly. Serve it with garnishing with sesame seeds and dipping sauce.
